Marinated Grilled Hawaiian Chicken Breast with Stir fry Vegetables
Ingredients
1 - package of frozen stir fry vegetables
3 - cloves of crushed garlic
1 - large green bell pepper into thin slices
1 - large onion cut into thin slices
4 - Chicken Breasts well rinsed
1/4 - cup of teriyaki sauce
1/2 - teaspoon of basil
Juice from a 16oz can of pineapple (reserve pineapple rings for garnish)
Olive oil or cooking oil
Preparation
Place chicken breasts in a bowl and add teriyaki sauce, pineapple juice, basil and garlic. For maximum flavoring, marinade overnight in the refrigerator for at least 30 minutes. Heat griddle to 350 degrees. Spray with cooking oil or 1 tablespoon of olive oil. Place chicken breast slowly on griddle and brown on each side for 4 minutes or until no pink juice is draining. In one row, place stir fry vegetables, sliced peppers, onions and in a separate row, place pineapples rings on griddle. Also mix one pack of stir fry vegetables. Saute until tender and turn pineapple rings until caramelized. Place cooked chicken breasts on plate. Add pineapple rings on top of chicken breasts. Remove tender, sauted vegetables and place on plate.
