Herb Roasted Chicken Breast with Lemon Pepper

Ingredients
1 - Teaspoon each of assorted fresh herbs: basil, oregano, thyme, rosemary or Mrs. Dash
1/2 - Cup of light soy sauce
1 - Teaspoon each of veg oil or olive oil or veg spray
1 - Large onion
1 - Large bell pepper or just use a 16oz package of seasoned blend (frozen chopped celery, bell pepper, onions)
Directions
Preheat oven to 350 degrees and marinate in herbs & soy sauce. Cook for 45 mins or until no pink juices are seen. Sprinkle chicken with fresh lemon juice. Let rest for 10 min before serving. Enjoy!
